Poached Fish Single Serving

For about 6 oz of fish:

1 c water
1 tsp lemon juice
1 tsp vinegar
3 peppercorns
1 bay leaf

In a  frying pan, combine the ingredients and bring to a boil. Add the fish and let simmer, covered, for about 7 minutes or till fish flakes easily when pierced with a fork.

Top fish with your favorite sauce, if desired. (Above picture shows salmon with a Bechamel.)
