Spicy Hot Jalapeño Soup Recipe for One Serving


Makes 2 servings if served as a side, one if it's a main course. Red or green jalapeños can be used, but they should be fresh -- not pickled or dried.

1 teaspoon butter
1 1/2 teaspoon all-purpose flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
3 tbs finely chopped jalapeno peppers
3/4 cup sharp cheddar cheese, shredded

Melt butter in a saucepan over medium heat. Add flour; cook and stir 30 seconds or until bubbly. Next add the milk, salt, onion powder and cayenne pepper; bring to a simmer over high heat, stirring frequently.

Add the peppers and return to a boil. Reduce heat to low; simmer uncovered 2 minutes, stirring occasionally.

Add the cheese and stir over low heat, just until cheese melts (do not boil).
