Sweet Heat Sandwich

This recipe began as a way to use up some leftovers... but I might try making it again.

1 cooked sausage, diced
1 small-to-medium tomato, sliced into thin wedges
1/4 medium onion, sliced
1 thai chile, diced
2 tbs chopped or crushed pineapple pieces (from a can)
1 tbs pineapple juice (reserved from can)
2 dashes lemon juice
1/2 tsp garlic paste
1 tsp brown sugar
1 tsp salt
oil for frying

sharp or mature cheddar cheese

8-inch section of French baguette, sliced for sandwich*

*(Note: This actually made enough filling for 2 sandwiches. I suspect if I had made it as a tortilla wrap there would have been room for the full amount of filling.)

Stir-fry the vegetables and spices till the onions and tomatoes are softened and cooked through. Set aside.

Slice enough cheese to cover one side of the sandwich bread. Place this piece with the cheese on top under the broiler for just long enough to melt the cheese -- about 3 minutes. Remove the bread from the oven, and spread it with *(half) the filling mixture. Close the sandwich.
