Tomato Basil Omelette for One

2 to 3 tbs olive oil (for frying)
1 tomato, sliced
3 eggs
1 tbs water
1 tsp dried basil
4 dashes black pepper
1/2 tsp sugar
3/4 tsp garlic salt

Oil the frying pan and set over high heat. Place the tomato slices into the pan in an even distribution. 

While the tomatoes are beginning to cook, beat together the eggs, water and spices. Pour the mixture over the tomatoes and let it cook. [I am assuming you know a bit about making an omelette here... everyone has their technique for getting it to come out right.] Serve the finished omelette immediately.
