Thai Style Chicken Peanut Satay Single Serving Recipe


This recipe can serve two if presented with a side dish (such as the lovely coconut rice in the photo above), or it makes one serving if eaten on its own.

Chicken Satay

1 1/2 c cooked chicken pieces 
2 tbs brown sugar 
2 tbs lemon juice 
2 tbs olive oil 
2 tbs peanut butter 
1/4 c minced green onions or chives 
1 tsp soy sauce 
1 tsp cumin powder 
1/2 tsp cayenne pepper

In a skillet, combine everything but the chicken and cook the sauce for 5 minutes over low heat. Add the meat, stir to coat, and heat 5 minutes more or till the mixture is bubbly.



This reheats well, and is not a bad thing to have leftovers for...
