1/4 c flour
3 tbs sugar
2 tbs cocoa powder
1/8 tsp baking powder
pinch salt
1 egg
3 tbs milk
3 tbs olive oil
1/8 tsp vanilla
frosting (optional)
Combine the flour, sugar, salt, cocoa, and baking powder in a microwave safe bowl and mix thoroughly. Add the egg, milk, oil and vanilla and mix until smooth.
Microwave for 1 1/3 to 2 minutes, or until cake is puffy and a toothpick inserted in the center emerges clean.
If desired, let cake cool slightly and top with frosting.
