1 tablespoon canola oil or melted butter
2 tbs all-purpose flour
1 1/2 tbs unsweetened cocoa powder
2 tbs brown sugar
1 tablespoon brewed coffee, at room temperature (or 1 tbs water and a pinch of instant coffee powder)
1/4 teaspoon vanilla extract
1 egg white
Pinch of salt
2 whole graham cracker rectangles, crushed
3-4 large marshmallows
You will need two dishes: one for mixing and one for cooking. If you want to make it in a mug, use a large one to avoid spillover.
- In the mixing bowl, stir together the butter, egg white, coffee, vanilla, flour, sugar, cocoa, and salt.
- In the cooking bowl or large mug, pour the graham cracker crumbs, then top with the batter mix. Finish with the marshmallows, pressing them down into the batter (they will tend to float upward and expand as they cook).
- Cook together in the microwave for about 1 minute, or until cake ceases to look shiny.
