Smoothie Bowls have become a recent fad, especially amongst the "food porn" crowd since they tend to photograph so nicely. It is effectively a smoothie, but served in a bowl with toppings of fruit, nuts, granola, seeds, or whatever else you like.
Though smoothies have a reputation for being a health food, they are often surprisingly high in calories. Smoothie bowls, being eaten with a spoon instead of chugged down, help to slow the eating process and make the smoothie a little more worthwhile.
1 banana, peeled, sliced, and the pieces frozen
1/2 cup ice
1 cup coconut milk (soy milk or almond milk can also be used)
2 tbs lemon juice
1 tsp lemon zest
2 tbs honey
1/4 tsp vanilla
2 drops yellow food color (optional)
For the topping:
1 tbs poppy seeds
1/3 cup fresh blueberries
1/4 cup granola OR favorite cereal
Combine all smoothie ingredients in a blender, food processor or smoothie maker, and blend together till smooth.
Pour the smoothie mix into a bowl, and top with the seeds, fruit and cereal. Serve immediately.
