1 cup cooked, shredded chicken
1/2 cup diced cucumber
4 tbs lemon juice
1 tbs water
1 tsp cornstarch
2 tbs sugar
1/4 tsp lemon zest or dried lemon peel
3 dashes garlic salt
In a saucepan or frying pan, stir together the lemon juice, water, sugar, cornstarch, spices and lemon peel. Turn heat to medium and let the sauce cook until thick, bubbly and transparent.
Add the chicken to the pan, and toss to coat. Let cook till chicken is hot.
Add the cucumbers last, and let cook till just warmed through. Remove from heat, and serve.
The lemon juice is very tart. A bland side dish such as rice is suggested.
