Breakfast Banana Bread Bowl - Single Serving


Somewhere between banana bread and banana pancakes, this dish is made in the microwave and only takes a few minutes to prepare.

1 banana
1 egg
1/4 tsp maple flavoring
1/8 tsp baking soda
1/8 tsp baking powder
1/4 tsp salt
2 tbs white sugar
2 tbs brown sugar
2 tbs sour cream
3 tbs flour

In a large microwave-safe bowl, mash the peeled banana with a fork until wet and no large chunks remain. Add the egg and mix thoroughly.
Add maple flavor, baking soda, baking powder, salt and sugars. Stir well.
Add sour cream. Stir well till smoothly combined.
Add the flour and stir till smoothly combined.
Place the bowl in the microwave for about 3 minutes (give or take roughly 30 second depending on your microwave.) Bread should be firm when done.
Let cool for 1 to 2 minutes before eating.
