Inspired by <a href="https://www.youtube.com/watch?v=vlbP49_EMTY">the viral video</a>, this is my effort to mimic the omurice of <a href="http://kichi2.net/">Kichi Kichi in Kyoto.</a></div>

Omurice is a Japanese dish consisting of an omelette atop fried rice, normally flavored with ketchup, but in Kichi Kichi's version, a beef demi-glace is used.</div>
<div style="text-align: justify;">

<div style="text-align: justify;">
Kichi Kichi is famous for the carefully shaped omelette which unfolds intself over the rice when sliced open. I have not succeeded in producing the effect myself (though, my suspicions based on 3 different trials so far, is that it probably needs a medium heat and a very particular size of pan.) This resulting recipe tastes good, regardless whether you can make the perfect omurice omelette.</div>
<br />
FOR THE RICE:<br />
1/3 c white rice (short grain preferred)<br />
2/3 c water (approximate)<br />
vegetable oil, for cooking<br />
2 tbs diced onions<br />
2 tbs diced chicken<br />
1/4 c mirepoix or other chopped veggies<br />
1 tbs butter<br />

Cook the rice till tender by boiling it in the water, in a covered pot. (Add more water if necessary to prevent burning or dryness.)<br />
In a skillet, put the oil, chicken, and vegetables, and let them cook till softened.<br />
Add the butter and the cooked rice, and stir fry for a minute or two to combine and heat evenly.<br />
Add prepared demi-glace to taste and mix well.<br />
<br />
At this point, the rice should be molded on a plate into a sort of oval mound.<br />
<br />
FOR THE OMELETTE:<br />
4 large eggs<br />
dash salt<br />
vegetable oil, for cooking<br />
<br />
Beat the eggs and salt together, and run the eggs through a strainer to remove the stringy parts of the white. In a well-oiled skillet, put the egg mixture and try to mold it at the edge of the pan into a oval shape to match the outline of the rice. Let the eggs cook firm but, if possible, let the inside part stay soft.<br />
<br />
Carefully place the eggs atop the rice mound.<br />
<br />
FOR THE TOPPING:<br />

If you managed to make the omelette in the style of Kichi Kichi, slice it open and let it fall over the rice.<br />

Most of his advice was about preparing an elaborate and expensive veal-bone broth from scratch, that would take 3 hours roasting veal bones, 18 hours of cooking them into stock, and which would be used to then form the demi-glace.<br />
<br />
While happy for the advice, the truth was there was pretty much no way I was going to do that at home. Instead, I devised this following recipe. It is actually very similar in taste to the fancy restaurant recipe that takes days to make, but much easier and much better suited to single-servings.<br />
<br />
BROTH:<br />
3 c beef stock<br />
1 c mirepoix (chopped onions, celery and carrots)<br />
3 bay leaves<br />
2 tbs liquid aminos<br />
1/4 c plus 1 tbs Mijiu or Sake<br />
1/2 package (approx 1/4 c) fresh parsley<br />
1/4 c sliced onions<br />
1/2 tsp sugar<br />
<br />
ROUX:<br />
1 tbs butter<br />
1 tbs flour<br />
<br />
Combine broth ingredients in a crock-pot or on a stove over low heat, and let cook, covered, for about 7 hours. Strain.<br />
<br />
In a saucepan, prepare a roux by melting the butter, then whisking in the flour till it starts to thicken. Pour in the strained broth and whisk well to combine.<br />
<br />
Let the roux mixture simmer over low heat till reduced to 1 cup. Skim off an foam or skin as needed. When reduced to 1 cup, this is the finished sauce.<br />

This is a good recipe for using up leftovers and frozen food items. Some people might want to double this recipe as it makes a smallish single-serving. The demo photo shows a double portion.<br />

1 serving mashed potatoes (about 1/2 cup)<br />
1/3 c frozen spinach<br />
1 large sausage (such as a bratwurst) cooked (optional - chopped into slices)<br />
1/8 tsp garlic salt (optional)<br />
1/2 tsp garlic powder<br />
1/8 tsp pepper<br />
1/4 tsp Italian seasoning<br />
1 tbs grated parmesan cheese<br />
balsamic vinegar<br />
<br />
Cook together the spinach and potatoes with the garlic salt, garlic powder, pepper, and Italian seasoning. Stir together to make a green-tinged mash.<br />
<br />
Add the sausage, then top with the parmesan cheese. Sometimes, raw cookie dough is better than a baked cookie. This recipe is egg-free and safe to eat uncooked -- in fact it might not even be bakeable, but it sure makes a nice dough! You can use real butter instead of the Brummel and Brown's spread, but the spread helps keep the texture more soft and creamy. Whole wheat flour gives the dough some additional texture.<br />

When the macaroni is finished, garnish with an <b>additional tablespoon of the Cowboy Caviar </b>OR <b>garnish with some sour cream, </b>which also blends nicely with the flavors.</div>

Add flour and additional seasonings, and stir together. Let cook together for half a minute.<br />
Add the spinach and chicken stock. Heat to boiling, then reduce heat and allow to simmer for five minutes.<br />
Remove soup from heat and puree -- you can use either a hand blender, or transfer it to a food processor. Soup should be reduced to a textured mix lacking in any large chunks of vegetable.<br />
Add the yogurt and puree to combine well.<br />

My efforts to recreate the flavors of European veggies and dairy products has led me to the exploration of spices and additives. This recipe results of a successful experiment with MSG to overcome the blandness of American so-called "Parmesan Cheese." MSG is most commonly sold in the US under the brand name Accent, and is available at grocery stores. </div>

Though some people claim sensitivity to MSG, <a href="http://www.bbc.com/future/story/20151106-is-msg-as-bad-as-its-made-out-to-be">experiments have found no health effects that can be linked to it.</a> The name sounds scary and chemical, but MSG is actually just a vegetable extract that occurs naturally in many foods, and you probably eat it all the time without even knowing it. Unless you have sensitivity to it, there's no reason to avoid its use. </div>

Parmesan Cheese is one such food wherein MSG occurs naturally, so adding an extra couple pinches to this recipe really helps turn up the flavor. Using a great quality Parmeggiano Reggiano from Italy would probably eliminate the need for it, if you wish to omit adding this seasoning. </div>

Begin by tossing together the broccoli and chicken with the MSG, Beau Monde and lemon-pepper.<br />
In a bowl, beat together the eggs, water, salt, pepper, MSG and Beau Monde. While you do this, let a frying pan heat up till hot, over high heat.<br />
Spray the hot pan or swirl some butter into it to in order to grease it, then add your egg mixture.<br />
Scrape the cooked egg to the center of the pan, then allow the liquid mixture to pour back out to the edge. Repeat until there is no significant amount of liquid egg remaining and the eggs are sitting on a firm base. The top off the eggs should still be shiny and uncooked.<br />
Turn heat to low, and toss the broccoli mixture onto the frittata. Allow to cook for 2-4 minutes or until the top of the eggs begin to look matte.<br />
Remove pan from heat and add cheese. Why Karo syrup? Because it has vanilla already added! (And no, I'm not paid to post about Karo syrup, I really did simply determine it to be the best ingredient to use for this recipe.) When doing one serving recipes, vanilla can be problematic since even in a 12 serving frosting recipe there is usually not much more than a teaspoon used. The Karo syrup already has a suitably small amount right in the mix, meaning you don't have to measure out absurdly small amounts of vanilla extract in order to prepare this frosting! It also doesn't need a lot of mixing, so there is no risk of grainy sugar bits left in the frosting. Simply smooth it over your cake of choice and dig in!</div>

Oil or spray a frying pan and add the onions. Allow to cook till beginning to brown.<br />
Add the corn and mushrooms and the soy sauce, and allow to cook till evenly hot.<br />
In the meanwhile, scoop the sweet potato meat from its jacket, mash it with a fork, and smooth it over your tortilla. Top with a handful or two of fresh spinach leaves.<br />
When the onion mixture is done cooking, remove it from the heat and spoon it over the spinach leaves in the tortilla. Top with three or four packets of Taco Bell Fire Sauce (or another sweet-tasting hot sauce.)<br />

While it sounds like some kind of snooty "Europeans are better" thing to say, the fact is that the quality of many food ingredients there are much better and more flavorful than what is normally available in the US. There's a <a href="http://www.amazon.com/Young-Hollywood-Salad-Recipe-Ashley/dp/B00TE99O5A">Young Hollywood Salad</a>, so I decided to call this an Old Hollywood Salad, because it reminds me of the kinds of salads people were eating in Southern California when I was growing up there. This salad needs to be prepared a little in advance of when you plan to eat it, to allow all ingredients to chill and marinate. </div>

For the dressing:<br />

3 tbs olive oil<br />
2 tbs white wine vinegar<br />
2 tbs water<br />
1/2 tsp dried basil<br />
1/4 tsp dried cilantro<br />
1/4 tsp dijon mustard<br />
1/4 tsp (heaping) sugar<br />
2 dashes salt<br />
2 dashes pepper<br />

For the salad:<br />
3/4 cup bowtie pasta<br />
boiling salted water (for cooking the pasta)<br />
1/2 of a 5 oz can brined or salted tuna, drained<br />
1 hard boiled egg, peeled and sliced<br />
1/2 avocado, sliced<br />
1-2 handfuls of fresh baby spinach<br />
green onions, finely chopped<br />

Begin by cooking the pasta in the the boiling water, till it is al dente.<br />
While the pasta cooks, prepare the dressing: mix all dressing ingredients together in a bowl and whisk together thoroughly.<br />
Add two tablespoons of the dressing to the drained tuna, and let chill together for 1 hour.<br />
When the pasta is ready, drain it, and combine with 2 tablespoons of the vinaigrette. Allow the pasta to chill for 1 hour.<br />
When the tuna and pasta are ready, prepare a dish with the spinach leaves, and arrange the tuna, pasta, egg and sliced avocado around it. Garnish with the green onion. Serve with the remaining dressing.<br />
