Grilled Cheese with Onion Chutney
This grilled cheese sandwich utilizes the Caramelized Onion Chutney recipe to add an extra layer of flavor. Another way to add flavor is through your choice of bread -- it is pictured here on whole wheat, but I have found rye bread to give the best tasting results so far.
I had been advised that using mayonnaise in place of butter when grilling a sandwich produces superior results. It does seem like it might be rendering the bread a little more crispy -- you can use it, or the more traditional butter.
- 2 slices of sandwich bread
- mayonnaise or butter
- 1/4 cup shredded sharp cheddar cheese
- 2-3 tablespoons Caramelized Onion Chutney
- butter for frying
Begin by spreading both sides of each piece of bread with mayonnaise.
Heat up a large frying pan with melted butter, and place the bread slices into the pan. Let them cook till lightly browned on the bottom.
Turn over the bread slices. On one slice put the cheese; on the other, put the chutney. Allow the bread to cook on low heat till browned and the cheese is mostly melted.
Assemble the two pieces of bread to form a sandwich.
