Thai Style Vegetables - Single Serving Dinner Recipe
2 cups any vegetable, par-cooked if needed
oil or butter for frying
3/4 tsp minced ginger or ginger paste
1/2 tbs minced garlic or garlic paste
1/8 cup honey
3/4 tsp fish sauce
1/4 teaspoon sriracha
3/4 tsp soy sauce
1/2 to 1 cup cooked jasmine rice (leafy veggies like spinach will need more rice to fill out the dish, bulky veggies like carrots will need less rice)
oil or butter for frying

1/2 to 1 cup cooked jasmine rice (leafy veggies like spinach will need more rice to fill out the dish, bulky veggies like carrots will need less rice)
- Begin by making the sauce: heat a skillet with the oil or butter, and add the garlic, ginger, honey, fish sauce, sriracha and soy sauce. Stir together and let toast over low heat for a minute or two so the garlic can release its flavor.
- Add the vegetable of your choice (I used spinach in the example picture.) Cook through, stir-frying with the sauce.
- Serve vegetable atop the rice.
If served as a side dish, this can make two servings.
