Single Serving Spinach and Swiss Mac and Cheese Recipe


Swiss and Spinach Macaroni

1/2 cup dry macaroni noodles
1/3 c frozen spinach

1 tbs butter

1/2 tbs cornstarch
1 1/2 tbs water
3 tbs evaporated milk
1/4 teaspoon Sriracha sauce
1/4 teaspoon Dijon mustard
1/4 tsp onion salt
4 dashes pepper
4 heaped tablespoons shredded Swiss Emmentaler cheese

In boiling salted water, cook the noodles to al dente. Add the frozen spinach and let cook till it is thawed. Drain together, and return to the pan.

In a separate bowl, whisk together the cornstarch, water, evaporated milk, Sriracha, Dijon, salt and pepper in a bowl.

Add the butter to the pan with the noodles and stir to melt, then add the milk mixture and the cheese. Stir together until a thick, creamy sauce is formed.

This recipe uses the same basis as the regular Mac and Cheese recipe. Some spare Emmentaler and a fondness for spinach cheese dips brought this on.
