You can prepare some of the vegetable puree in advance and keep it ready in the fridge or freezer for when you might want to try this treat.
- 4 tbs white flour
- 1/4 tsp baking powder
- 1 tbs brown sugar
- 1 tbs white sugar
- 2 tbs pureed pumpkin, zucchini or carrot
- 2 tbs milk
- 1/2 tbs vegetable oil
- 1/8 tsp cinnamon
- 1/8 tsp nutmeg
- pinch cloves
- pinch ginger
- pinch salt (optional)
- 3 drops vanilla extract (optional)
In a large mug, combine all ingredients until well mixed.
Microwave for 1 minute 15 seconds, or till batter is matte.
Top with powdered sugar, your favorite frosting, or with Cream Cheese Frosting for One.
