This low-fat vegetable entree still manages to taste great! It is called a Monster taco due to its large size.
1 large tortilla (8 to 10 inches)
1 small sweet potato, cooked
1/3 c sliced onions
1/3 c frozen corn
1/3 c sliced mushrooms
fresh spinach leaves
1 tsp soy sauce
3-4 packets Taco Bell Fire Sauce
oil or cooking spray (for the pan)
Oil or spray a frying pan and add the onions. Allow to cook till beginning to brown.
Add the corn and mushrooms and the soy sauce, and allow to cook till evenly hot.
In the meanwhile, scoop the sweet potato meat from its jacket, mash it with a fork, and smooth it over your tortilla. Top with a handful or two of fresh spinach leaves.
When the onion mixture is done cooking, remove it from the heat and spoon it over the spinach leaves in the tortilla. Top with three or four packets of Taco Bell Fire Sauce (or another sweet-tasting hot sauce.)
Roll or fold your tortilla, either taco style or burrito style, for your sandwich.
