Arroz Caldo - Philippine Chicken and Rice Soup

The name means simply "rice soup" but it's so much more than that! Heavy on the ginger, the broth can be overpowering by itself, but taken along with mouthfuls of rice, chicken and boiled egg it comes together into a delicious, filling, astringent soup dish. Bonus: it is said to be an excellent cold remedy.



2 c chicken stock or broth
1/4 c water
1 tsp ginger powder
1/2 tsp onion powder
1/2 tsp garlic powder
dash salt
3 tsp fish sauce
5 tsp lemon juice
1/2 tsp honey

3/4 c cooked chicken pieces
1/3 c instant rice (regular rice can be substituted, but it will take much longer to cook)

1 hard boiled egg, sliced
1 tsp chopped chives or green onions

Combine liquids and seasonings together in a saucepan. Place over medium-high heat.
Add the rice and chicken. Cover, allow to cook for 10-15 minutes, or until rice is done and soup is hot.
Transfer to a serving bowl. Garnish with boiled egg and chives.
