One Serving Breakfast Parfait

Something more interesting than just a bowl of cereal with fruit on top -- this is effectively a variant on the popular smoothie bowls, but made more simple and practical for the morning. 

This cherry smoothie recipe works very well, since it doesn't require a lot of prepping, and produces a nice thick smoothie that will hold up against the cereal. If you buy frozen, pitted cherries, there's no prep at all; but if you start with fresh fruit, you can pit them and stick them in the freezer the night before.

You need:

1 cup of your favorite cereal

1 cup pitted cherries, frozen
1 5.3 ounce container Greek style vanilla yogurt
2 tbs sugar
1/2 tsp vanilla

In a blender or food processor, combine the cherries, yogurt, sugar and flavoring. Blend together till uniform -- the mixture should be thick like soft-serve ice cream.
In a bowl, layer 1/2 cup of the cereal, then pour the smoothie over it. Top with the remaining cereal and serve.
